What is Kombucha?
Kombucha is made from fresh tea, cane sugar and a living ferment. This living ferment is a mix of different bacteria and yeasts that 'eat' the sugar. During the fermentation process, acids, yeasts and enzymes are formed.

The basis of this Kombucha is Matcha tea supplemented with ginger. Due to the special fermentation process, the kombucha contains less than 0.2 grams of residual sugar per 100 ml. Because this drink is fermented in rice syrup, no fizz is created. The kombucha is not pasteurized.
