Mattisson Organic Extra Virgin Olive Oil is made from a balanced blend of Picual, Picudo, Hojiblanca and Arbequina .
This blend ensures consistent quality , a rich fruity flavour and a harmonious balance between bitter, sharp and softly sweet.
Production process
The olives are pressed mechanically at a low temperature (first cold pressing).
This process optimally preserves nutrients, aromas and antioxidants .
No chemical extraction methods or additives are used.
Characteristics & flavor profile
A characteristic of top quality extra virgin olive oil is its low acidity – this oil has an acidity of maximum 0.8% .
The taste is fruity with light bitters and a subtle peppery aftertaste.

Organic extra virgin olive oil consists mainly of the monounsaturated fatty acid omega 9 (oleic acid) , and smaller amounts of omega 3 and 6.
