Honeydews are made by bees that forage on the secretions of insects that live on the sap of trees. They contain a large percentage of long chain acid molecules called oligosaccharides. Fructose is a shorter chain molecule that crystallizes faster, and glucose is the smallest acid molecule that crystallizes the fastest (think raw sunflower honey). Nectar honey is usually characterized by the presence of glucose and fructose in different proportions.
